WHY WE LOVE IT: Even if this were just a beautiful, Rustic, elegant food in a rustic, elegant ranch house. Eat and leave, or stay a few days. Restaurant that served beautiful intelligently created food using organic ingredients food from as many sustainable sources as possible matched with fine wines, we would love it. But the 5,000-acre Devil’s Thumb is so much more — a philosophy of ranching in Earth-friendly ways that affect the planet as little as possible, a way of treating staff that carries over to the guests, and a style of dining that echoes those themes. It’s all good.
